I see where your thought in this is. You want to have Irons in case something happens to your scope. (If I am in left field let me know.)
I wonder if they make a rear sight that will clamp on your weaver style base? Take the scope off, put the irons on...
Your principal is sound. If you miss a shot while hunting and loose all confidence in your set up it is nice having the ability to change and know what you have in your hands is usable.
Have you thought about having a second scope, or an extra scoped set up, in case something happens to your primary?
Another thought in a different direction. They use to make a set of rings that had a set of iron sights on top of the rings them self's. Once you found your load, you would file in the rear groove and then file down the front/rear to acquire elevation. I am just talking out loud here...
