the Redhawk and Blackhawk boils down to personal choice, they are both built like tanks and they both are capable of excellent accuracy. The things to consider are which one feels best in your hand, do you prefer double action to single action and weight. I prefer single actions for nostalgic reasons plus I like the feel of them in my hand but others prefer the feel of a double action. You also have the option of the Bisley frame in the Blackhawk so I'd suggest handling that one also if you can. I also have never seen any real advantage to a double action for hunting as most shots are made single action and even in a crisis situation someone competent with a single action can empty the cylinder in a hurry which also brings up the fact that a double action is faster to reload but that too normally doesn't effect a hunting situation. The last thing is the Redhawks are generally a little heavier than the Blackhawks. I would definitely try to handle the Blackhawk, Bisley Blackhawk and Redhawk before making a decision and if you can shoot them that's even better. The one other thing I almost forgot is that they handle recoil differently. The standard Blackhawk is designed to roll in your hand whereas the Bisley and double action have more of a tendency to push straight back into your hand.
