I finally got him put away. Finished making the sausage last night. I finished the summer sausage in the picture a couple of days ago. This deer is the first with the Encore. A 150 gr Nosler BT in the '06 with 50 gr of RL-15 and he was down.

Out of this little deer I got 18 lbs of summer sausage and about 33 lbs of breakfast sausage. Counting what I had to add like fat I got pretty close to 35 lbs of boneless meat off of him. And that is not counting the backstraps.

Nice little buck he should be tasty! Did you do the sausage yourself? I have a stuffer adapter on my grinder but I've never used it. I just always turn everything except the choice steaks into burger.

I did everything myself from scratch including the spices. Will be glad to e-mail my summer sausage recipe to anyone who wants it.
