Pseudorabies transferred to dogs but it is also communicable to humans.

I'm sure that a lot of the animals us hunters have killed and subsequently handled had dangerous microbes or bacteria or germs or who knows what, either on the outside or the inside. I killed a coyote once that had rolled in human feces (he got trashed, not skinned.

I have made it a point to wear heavy duty (but throw away) rubber gloves for over forty years when gutting or skinning my prey.

Just use some common sense and be careful. In some ways touching a public bathroom door handle when exiting can be as bad or worse.

X2

Also, saves on a lot of unnecessary medical bills. For a cheap box of disposable gloves.

Another thing is to be careful with the knife. You really don't want to cut your hand or finger when you're wrist deep in entrails.

All it took was an armfull of flea's from a bunny many years ago to have me add latex gloves to my kit. I started using them for big game, and realized that they were a great idea. Besides keeping the cooties off my hands, they make gripping a knife better, and something about the gloves makes clearing out the bunghole parts "easier" ;^)
