We have a plethora of squirrel on our lease and quite frankly, they are a pain in the rear. I just ordered me a 22/22 mag pistol and I'm getting excited about doing some squirrel hunting this spring. They live primarily off of deer corn and acorns at our place so I'm betting they would be good to eat.

If you fancy some chicken-of-the-tree, what's your favorite way to cook them?

Mom used to just roll in flour and fry it like chicken. Only way ive ate it......and it was my favorite meal ever. Im nearly sure she probably used ?crisco? but im not a cooking type feller and shes been gone about 5 yrs.

I'm not a huge fan of squirrel but found that cooking them in a slow cooker in gravy, usually cream of mushroom soup, can be tasty.

Put the quarters in and cook until the meat comes off the bones. Pick it off and put back in the cooker. Add the soup and cook. Serve over biscuits.

Not sure if you have fox squirrel or grays. Grays are a little better eating, in my opinion, but aren't quite as big.

There was recipe for squirrel chowder in Field and Stream years ago when they featured a story on Mac English and his squirrel dogs. It looked pretty good but I never tried it.

I like it just about any way you can imagine fix'n it, but one of the easiest and my favorite way is to skin and gut'em leaving them whole (I cut off the head). Boil in large pot for 1.5 hours (unless they're young squirrels, then can be less). Remove from pot and dab dry. Rub down with olive oil and apply your favorite dry-rub, then place in a smoker (I use an electric) at 220 degrees for 1.5 hours using your favorite wood (mine is hickory or mesquite).....it's making my mouth water just typing about it! Serve with your favorite sides.


It takes 43 muscles to frown and 17 to smile, but only 3 for proper trigger squeeze.

You can also tenderize them in a Presto cooker before frying.

Boil pieces till tender.Salt and pepper pieces and roll in flour and Brown them in about 1/4 inch of Crisco oil. Pour off excess oil and make gravy using the broth from the boiled squirrels.Grands biscuits and mashed taters you will have a very fine meal

What Kim said -I use the same recipe and it turns out fantastic. seems like a lot of work for a tree rat but it is worth it. i have never had anyone say they didn't like it. do the same with rabbits. most all of our small game and waterfowl make it to the smoker.

Oh, man, I love squirrel! I always think it tastes like dark meat turkey. My to favorites are to cook it in a slow cooker with onions just like a roast, or to fry it. The key to frying it is to bread and quick fry in the skillet then finish in the oven at 325 to make sure the inside is tender. Enjoy!

You can do a lot with them. Slow cook the meat until it's tender and then fry it, make a soup, make a pot pie, all are good.

My Grandmother could make the best squirrel dumplings on earth. Sadly we never wrote the receipt down before she passed 19 yrs. ago. She was half Cherokee Indian and boy howdy she could cook. Tough as nails she was. She is greatly missed as is her squirrel dumplings.
