Elk backstrap with some olive oil, Lawrey's Season Salt, fresh ground black pepper, and 1/2 shot of Jack Daniels. Cooked Medium-Rare - Damn!

Dadgummit! I was just daydreaming yesterday about elk steaks, as I congratulated a friend on one that he took last week in Idaho. Caribou, elk, bison...no other meat equals those three, when it comes to my taste buds.
Been struck with flu, then pneumonia, and my hunting this fall has been non-existant...but I can still daydream about next year, and I DO still have some bison in the freezer!

I remember my first elk steak.....man was it good. Harvested that animal when I was 14yo w/ a bow.

The last memory I have of elk hunting recently was getting thrown from that friggin mule......that makes my antelope steaks taste as good an any elk!

I missed my one opportunity this season but I still have a freezer full of vacuum bagged elk from last year so I'm set for quite a while but Dan you ruined it when you brought up the goat. I know goat can taste good but not elk good and the last goat I had tasted like a wet sock smells.

you should have shot the mule ... at least it would have made you feel better ... (I guess that wouldn't be right)... but you WOULD have felt better! ;-)

I would have...the bears in the area would have cleaned it up quickly! The only problem was that the saddle needed to get off the mountain. I had eight dislocated ribs and busted up knee....with that I figured the mule can carry the tack back to camp. He owed me that anyhow.......
