I'm not a huge fan of squirrel but found that cooking them in a slow cooker in gravy, usually cream of mushroom soup, can be tasty.

Put the quarters in and cook until the meat comes off the bones. Pick it off and put back in the cooker. Add the soup and cook. Serve over biscuits.

Not sure if you have fox squirrel or grays. Grays are a little better eating, in my opinion, but aren't quite as big.

There was recipe for squirrel chowder in Field and Stream years ago when they featured a story on Mac English and his squirrel dogs. It looked pretty good but I never tried it.
