I like it just about any way you can imagine fix'n it, but one of the easiest and my favorite way is to skin and gut'em leaving them whole (I cut off the head). Boil in large pot for 1.5 hours (unless they're young squirrels, then can be less). Remove from pot and dab dry. Rub down with olive oil and apply your favorite dry-rub, then place in a smoker (I use an electric) at 220 degrees for 1.5 hours using your favorite wood (mine is hickory or mesquite).....it's making my mouth water just typing about it! Serve with your favorite sides.
